These animals are totally edible. I would recommend a slow roast on a rotissarie spit. The Joy of Cooking can show you how to go about skinning them, although you may have to adapt from the method for squirrels, described on page 468 of the 1962 edition.

I think Constance must have the West Virginia version of the JoC.
