Carla: I prefer pears that have the rougher brown shin, opposed to the smoth green skin. I am not sure of the name, but I think the fruit tastes better.
I buy pears when they are very firm and not ripe, and leave them out of the fridge. Personally, I prefer to eat the pear before it starts to delevlops small wrinkles around the stem. If this happens, I stick them in the fridge and eat them the next day. I like them about the firmness that if you were to press it very hard with your thumb, it would easily give, but if you gently applied pressure it would not dent.

I never know what pears to buy, when they are season or how to ripe them.
