Breakfast


I was about to post without a picture on dinner last night, but Connie beat me to it! See her comment below to read about our tasty dinner. Never travel without a digital camera, as food will go undocumented.

Instead we get today's breakfast. I made an omelet (sort of) with two eggs from a local farm. They yolks are bright and rich, more orange than yellow. I am running low on veggies, so I added sauteed onions to the egg mix, and put some mild gouda in the omelet. With toast and chopped tomatoes, it was a great breakfast. Lately I have been using a french press instead of my drip coffee maker. The clean up is easier, no filters, and it makes good strong coffee. Although it gets cold since there isn't a hot plate under the coffee. So drink up!

Dinner....Florida style; this week was perfect for a fire pit in the backyard with gulf coast oysters on the half shell (and grill) and stars flooding the sky. Neighbors and friends joined us and we look forward to more neighborly gatherings around the fire on cool winter evenings.

The best breakfast in the world, after an evening oyster roast, is cold beer and raw oysters.

Today, I made up a recipe for blueberry muffins. being in a hurry, I used Jiffy Mix - 1 cup and added 1/4 cup wheat germ. To this, add 1/ egg, beaten; 1/3 cup milk or more as needed; 2 or 3 tablespoons perserves, I used calamondan citrus; 2 tablespoons vegetable oil; mix well and fold in a cup fresh bluebarries.
Bake at 375, preheated, for about 20 minutes, more or less depending on your oven. Serve with some of Marcat's home made butter.
